Then you might be interested in the following recipe by farmer Nanette Herz.

Throughout her life she grew everything in her large garden - from beans and lettuce, to tomatoes and cucumbers, gooseberries and cherries.

With peasant wisdom and traditional customs in mind, she processed the garden harvest into fresh dishes or preserved them for later, for example by preserving or preserving them.

With a few sweet ingredients you can conjure up the delicious dessert rhubarb with raspberries and vanilla quark

For four people you need:

  • 500 grams of rhubarb

  • 250 grams of sugar

  • 125 grams of raspberries

  • 1 vanilla bean

  • 500 g quark (20%)

  • 100 g sour cream

  • honey (optional)

You will also need a casserole dish and aluminum foil.

Quick and easy for the perfect spring dessert Rhubarb with raspberries and vanilla quark

  • Preheat the oven to 160 degrees Celsius top/bottom heat (140 degrees Celsius fan oven).

  • Peel the rhubarb, trim and cut into equal-sized pieces.

    Place in a casserole dish with the sugar and two thirds of the raspberries and mix.

  • Cover the dish with aluminum foil and braise in the oven for about 25 minutes until the rhubarb is soft but not yet falling apart.

    Take out and let cool.

  • For the vanilla quark, split the vanilla pod lengthways and scrape out the pulp.

    Stir together with the quark and sour cream.

    Sweeten with honey if you like.

  • Place the quark dish on a plate and garnish with the rhubarb compote and fresh raspberries.
