Ingredients for 4 persons:

  • 750 grams of green asparagus

  • 5 tablespoons olive oil or canola oil

  • herbs to taste

  • salt and pepper

  • 4 tablespoons grated parmesan

Preparation:

  • Wash the green asparagus, cut off the woody ends.

  • Brush the raw and trimmed stalks with oil and grill over direct heat on the grill grate for 6 to 10 minutes as directed above. 

  • When the asparagus is al dente and cooked, take it off the grill, sprinkle the vegetables with herbs, the grated parmesan and season with salt and pepper.

    Ingredients for 4 persons:

    For the vinaigrette:

    • 2 tablespoons apple cider vinegar

    • 1 tbsp finely diced shallot

    • 2 teaspoons finely grated zest of an organic lemon

    • 1 tsp mustard, preferably Dijon mustard

    • 4 tbsp olive oil

    • ¼ tsp coarse sea salt

    • ¼ tsp freshly ground black pepper

    For the asparagus:

    • 750 grams of green asparagus

    • ½ tsp coarse sea salt

    • 4 thin slices of cured ham

    Preparation:

  • In a small bowl, whisk together the vinegar, shallot, lemon zest, and mustard.

    Whisk in the oil until the vinaigrette forms an emulsion.

    Season with salt and pepper.

  • Cut off the hard ends of the asparagus spears.

    If desired, peel the lower third of the spears with the asparagus peeler.

    Lay out the asparagus spears on a plate, drizzle with a few tablespoons of vinaigrette and salt evenly.

  • Clean the grillage with the brush.

    Grill the asparagus and ham over direct medium heat, with the lid closed, until the asparagus is tender and the ham is crisp.

    Turn once or twice.

    The asparagus takes about six to ten minutes, the ham one to two minutes.

  • Arrange the green asparagus on a serving plate and spread the vinaigrette on top with a spoon.

    Crumble the crispy grilled ham, sprinkle on top and serve.
