We love Thai cuisine, and it's not just the hot and humid weather, because even Israelis who haven't visited the country like to eat what this wonderful cuisine has to offer.
Neta Levia prepared a wonderful dish of chicken strips with rice (is there anything more Israeli than that?) with the chicken coated in a delicious peanut butter sauce and the rice cooked with coconut liquid that gives it an aroma and flavors you have never tasted before.

Ingredients
½ kg of chicken cut into strips
1 teaspoon baking soda in powder
1 tablespoon cornflour
¼ cup soy sauce
3 tablespoons of oil
A handful of cilantro
For the peanut butter sauce
½ smooth peanut butter
5 tablespoons soy sauce
3 tablespoons demerara sugar
1 crushed garlic
1 tablespoon grated ginger
3 tablespoons lemon or lime juice
½ chili pepper (optional)
for rice
2 cups Thai rice
½ 3 cups liquid coconut (not cream)
1 teaspoon of salt
Coconut chips for serving.

Preparation
How do you make peanut butter chicken breast strips served on coconut rice?
1 Prepare the rice: place the rice, coconut liquid and salt in a pot and bring to a boil.
Cover, reduce to the lowest flame and cook for 20 minutes.
Turn off the flame and leave with the lid on for another five minutes.
Open and mix with a fork.
2 Mix the chicken, soda powder, cornflour and soy in a bowl and set aside for fifteen minutes.
Meanwhile prepare the sauce - grind all the ingredients into a smooth sauce.
3 Heat the oil in a wok or pan.
Fry the chicken for about 4-5 minutes, until golden.
Add the sauce and cook for 2 minutes.
4 Serve over the rice and sprinkle over a handful of coriander and coconut chips.
