Here's how to do it:

For a creamy soup with cheese and beer, you'll need these ingredients:

  • Topping:
  • 20 ml olive oil
  • 100 g onions, cut into strips
  • 0.5 tsp pepper
  • 1 teaspoon salt
  • 1 pretzel, cut into pieces
  • Beer and cheese soup:
  • 20 ml olive oil
  • 1 clove of garlic, finely chopped
  • 400 ml of beer
  • 500 ml broth (e.g. vegetable broth)
  • 200 ml whipped cream
  • 200 g Emmental cheese, grated
  • 200 g cheddar, grated
  • 1 teaspoon sweet paprika powder
  • Chives rolls, to taste

The preparation is really simple:

  • For the topping: Heat the olive oil in a pan and sauté the onions until translucent. Season with salt and pepper. Add pretzel pieces and fry until onions and pretzel pieces are lightly browned. Set aside.
  • For the beer and cheese soup: Heat the olive oil in a saucepan and fry the garlic briefly until fragrant. Deglaze with beer, broth and cream. Bring to a boil.
  • Reduce the heat and add Emmental cheese and cheddar. Heat, stirring, until the cheese is completely melted. Season with paprika powder.
  • Divide the soup into bowls and serve garnished with pretzel and onion topping and chives rolls.
