Asparagus is healthy. A stick of asparagus has four calories and consists of 93 percent water. Nevertheless, vegetables contain valuable nutrients such as vitamins A, C, E and B and plenty of folic acid.   • 600 g pork cutlet
  • 1.2 kg of white asparagus
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 400 ml hollandaise sauce
  • 150 g grated cheese
  • Chives, to taste

The preparation is simple and quick:

  • Preheat the oven to 180 °C convection.
  • Wash the pork cutlets, pat dry and pat gently. Season with salt and pepper.
  • Wash and peel the white asparagus and cut off woody ends. Place 200 g of asparagus spears on each pork cutlet, roll up and place next to each other in a baking dish.
  • Pour hollandaise sauce over the asparagus rolls and sprinkle generously with grated cheese.
  • Bake in the preheated oven for about 50 minutes until the asparagus is cooked. If necessary, cover with aluminum foil after 30 minutes so that the cheese does not get too dark.
  • Garnish with chives and serve with freshly baked baguette.
