Pastry chef Keren and Itzik Kadosh, owners of Jerusalem's Kadosh Cafe, co-produced a digital recipe booklet for Shavuot, with all proceeds from its sale going to the Association for Public Health.
The proceeds from the sale of the booklet go to the "One Soul" project, which provides mentoring to children of shell-shocked IDF veterans coping with PTSD, children who suffer from emotional difficulties and post-traumatic symptoms themselves.
The mentor creates a meaningful connection with the child and the family, creates shared experiences with him, and serves as a kind of older brother, friend and other significant figure in his life.

Groceries
For crunchy dough
- 150 grams cold butter, cut into cubes
- 80/<> cuppowdered sugar <> g
- 2 cupswhite flour 280 g
- Kursalt
- 1 egg
For the cheese filling
- 5 separated eggs
- 500 gramswhite cheese 9%
- 250 gram cream cheese 30%
- 70/<> cupcornstarch <> g
- 3 tablespoonflour 30 g
- 1 teaspoonvanilla puree
- 120/<> cupwheat heavy cream <> ml
Raspberry coli
- 200 g fresh or frozen raspberries
- 3 tablespoonssugar
- 1/2 lemon squeezed

Method of preparation
How do you make cheesecake, white chocolate and raspberry coli?
1For crunchy dough:In a food processor, put butter, flour, powdered sugar and salt and process to get crumbs. Add the egg and process until a uniform dough is obtained. Avoid overprocessing. If the dough does not crystallize, you can add a tablespoon of cold water. Tighten the dough between two baking sheets and put in the refrigerator for an hour.
2Preheat oven to 170 degrees Celsius. Roll out the dough into a leaf 1/2 cm thick. Cut out circles 8 cm in diameter and place in a baking sheet lined with baking paper. Bake for 10 minutes. Cool. Lower the oven heat to 150 degrees Celsius.
3per filling:Mix cream cheese, white cheese and vanilla puree in a bowl. Add egg yolks and sugar and stir until united. Set aside.
4Heat the heavy cream in the microwave or cauldron and pour over the white chocolate, wait 2 minutes and stir to a smooth cream. Add to the cheese bowl and mix well. Sift the cornstarch and flour into the mixture and mix.
5To assemble:Place the baked dough discs on the bottom of rings or small molds, and pour over the cheese mixture. If baking a ring, wrap the bottom of the ring in parchment paper and foil (to prevent leakage).
6Bake for about 20 minutes, lower the oven to 100 degrees Celsius and bake for another 40 minutes. Remove the cakes from the oven, cool and put in the refrigerator overnight.
7raspberry coolies:Grind raspberries in a blender or food processor. Strain and transfer to a cauldron. Add sugar and cook over medium heat for about 5 minutes until thickened. Add the lemon juice and cook another minute. Refrigerators.
8To serve: Carefully remove the cake from the pans and coat with raspberry coolies.
