Bread the egg yolks – tip: freeze the egg yolks beforehand
"The trick is to freeze the yolk for at least an hour," said cooking instructor Robert Opitz, according to a report by the German Press Agency (dpa). To do this, first carefully separate the egg whites from the yolks and slide the egg yolks into a silicone ice cube mold with semicircular shapes. You simply put the mold in the freezer.
Toss in breadcrumbs
If the egg yolks are hard, you should carefully squeeze them out of the silicone mold and bread them quickly, according to the dpa report. "To do this, I pull them through a beaten egg and turn them in breadcrumbs, which have previously been refined with ground almonds, salt, pepper and fried onions," says the chef. You can also press the breading lightly with your fingers.
