For dough
- 3/<> cup sifted white flour
- 1 tablespoon dry yeast
- 1/3 cupsugarsugar
- 100 gramssoft butter, cut into cubes
- 1 uniteggegg
- 1/2 packs, sour cream
- 2/3 buckwheat
- 1/2 tsp. salt
For stuffing
- 2 packsTricotta
- 1 pclemon zest from whole lemon
- 1 pieceOrange zest from whole orange
- 4 tablespoonssugar
- 1 tablespoonvanilla extract
- 1 uniteggegg
Sugar syrup
- 1/2 buckwheat
- 1/2 cupSugar
- 1 teaspoonvanilla extract

Method of preparation
How do you make dreamy yeast cheeses?
1Dough preparation: In the mixer bowl mix flour, yeast and sugar.
2With a low speed kneading hook add the butter, egg, cream and half the amount of water, and knead for about a minute.
3Add salt and knead for another 5 minutes or until a uniform and flexible dough is obtained.
4Transfer the dough to a well-oiled bowl and roll in so that the dough is greased on all sides.
5Cover with plastic wrap with a towel on it and let rise for about two hours.
6Prepare the filling: Mix all the ingredients into a uniform mixture and place in the refrigerator for half an hour.
7Remove the dough and divide into two equal balls.
8On a floured surface, roll each circle into a thin square and divide with a pulley into equal squares.
9Place a teaspoon of the cheese filling in the center of each square and close into an envelope.
10Transfer to a baking sheet lined with baking paper, brush with a beaten egg and let rise for another half hour.
11Preheat oven to 180 degrees Celsius, bake for about 25 minutes or until the cheeses are deep brown.
12Prepare the syrup: Bring the sugar, water and vanilla extract to a boil.
13Lower heat and simmer for about 10 minutes.
14Brush with sugar syrup as soon as you leave the oven.
