Cooling time: 2.5 hours

For the batter:

  • 1 jar of sour cherries (350 g drained weight)
  • 175 g softened butter + a little more for greasing
  • 150 g of sugar
  • 1 sachet of vanilla sugar
  • 1 pinch of salt
  • 3 eggs (size M)
  • 200 g of flour
  • 2 teaspoons baking powder
  • 2 tbsp cocoa powder
  • 2 tablespoons of milk

For the curd cream:

  • 500 g low-fat quark
  • 3 packets of cream stiffener
  • 2 sachet of vanilla sugar
  • 4 tablespoons of sugar
  • 400 g whipped cream

Fairytale recipe: how to bake the Little Red Riding Hood cake

  • Drain the sour cherries in a colander, collecting the juice. Measure out 250 ml of it (supplement with water if necessary).
  • Preheat the oven to 180 °C top/bottom heat (convection is not recommended here). Grease the bottom of the springform pan (26 cm in diameter).
  • For the batter, use a hand mixer to mix the butter with the sugar, vanilla sugar and salt for about 5 minutes until creamy. Meanwhile, stir in the eggs one at a time. Mix the flour first with the baking powder and then briefly add both to the other ingredients.
  • Pour half of the dough into the greased springform pan. Mix the cocoa powder with the milk and stir both into the rest of the dough. Spread the brown dough on the light dough with a spatula. Spread the drained sour cherries close together on top.
  • Bake the cake in the hot oven in the lower third for about 40-45 minutes. Then let it cool on a wire rack, remove it from the mold and place it on a cake plate. Perfectionists now place a cake ring or springform pan rim around the cake so that all subsequent layers finish nicely.
  • For the curd cream, mix the curd with 1 packet of cream stiffener, the vanilla sugar and the sugar using the whisks of the hand mixer. Whip the cream with 2 packets of cream stiffener until stiff. Fold the cream into the curd mass, then put the cream on the cooled cake and spread it evenly. Refrigerate for 2 hours.
  • For the icing, prepare the cake glaze from the cherry juice, sugar and cake glaze powder according to the package instructions. Pour it warm over the curved side of a tablespoon onto the curd mixture - this will not create a hole from the jet. Then let the icing cool down and chill the cake again for 30 minutes.
