With an empty bottle or a bowl: there are many ways to separate egg whites and yolks. Recipes such as crème brûlée or spaghetti carbonara only require the yolks. But what happens to the remaining protein? In cake recipes, when cooking, frying, drinking – protein can be consumed in many ways.
Which recipes are suitable for using leftover protein?
In principle, all dishes and cakes that require mere protein are eligible. But even in classic egg dishes such as scrambled eggs, the separated egg whites provide an extra load of protein. How long does protein last – can it be frozen?
Sometimes there is no acute use for leftover protein. Then it goes into the refrigerator. There, the protein will keep for about three days. Need more time? Freeze the egg whites. To do this, just put it in a freezer bag. This extends the shelf life to ten months and gives you more time to use protein residues. Do you need to use egg yolk instead?
