In most Thai restaurants, this recipe is part of the standard repertoire. There you can often find the Asian noodle salad under the name Yam Woon Sen, depending on the region also Yam Wunsen, which translates simply as glass noodle salad. As the name suggests, this dish consists mainly of glass noodles. They are thin, transparent and are made from mung bean starch. This even makes them gluten-free. In Vietnamese cuisine, salads are usually made with rice noodles, such as this Bun Bo Nam Bo, a traditional Vietnamese rice noodle salad.

The rest of the preparation is similar. The glass noodles are usually, as with us, supplemented with fresh vegetables and Asian spices and herbs. For a game of consistencies, peanuts and fried onions are added. The salad gets its salty note from the fish sauce and chicken broth. Fish sauce, as well as other essential Asian spices and spice pastes, are irreplaceable if the recipe is to be authentically recreated at home. So, let's go to the Asian market! Here's how to do it:

These are the ingredients you need for the Thai glass noodle salad:

  • Chicken South and Dressing:
  • 400 ml chicken broth
  • 1 tbsp peppercorns
  • 2 tablespoons of brown sugar
  • 3 garlic cloves, peeled
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 15 g ginger, sliced
  • 1 chili pepper, quartered lengthwise and seeds removed
  • 4 tbsp fish sauce
  • 400 g chicken breast fillet
  • Glass noodle salad:
  • 200 g glass noodles, pre-cooked
  • 100 g cucumber, cut into sticks
  • 50 g carrots, cut into strips
  • 30 g spring onions, cut into rings
  • 4 tablespoons lime juice
  • 50 g roasted peanuts
  • 100 g prawns, pre-cooked
  • 10 mint leaves, coarsely chopped
  • 4 tbsp cilantro, plucked
  • 3 tbsp fried onions

It's as simple as this:

  • For the chicken broth: To the chicken broth, add the peppercorns, brown sugar, garlic, salt, rice vinegar, ginger, chili pepper and fish sauce. As soon as the broth starts to boil, add chicken breast and simmer everything for ten minutes.
  • Then pour the broth through a sieve (reserving 200 ml) and pluck the cooked chicken breast into small pieces.
  • For the glass noodle salad: In a bowl, place the plucked chicken breast on top of the pre-cooked glass noodles and pour 200 ml of the broth over them.
    Complement the glass noodle salad with cucumber, carrots, spring onions, lime juice, peanuts, shrimp, mint and coriander.
  • Mix everything well and garnish with fried onions.
  • Enjoy your meal!
