There's something about lemon cake with a sense that always captivates my heart, a kind of summer combination of cake with a sour and sweet feeling. Unlike its sister orange cake, it is less popular and unjustifiably. We came to standard.

- 1 lemon cut into quarters with the peel, but without
- 4 eggs
- 200 mlwhipping cream 38%
- 1/4 canola oil or any oil with a neutral flavor
- 1/<> cupswhite sugar
- 1 cupvanilla extract
- 2/<> cup self-raising flour
For coating
- Lemon juice from half a lemon
- 50 ml heavy cream

Method of preparation
How do you make a lemon cake with a sense and a taste?
1Grind the lemon as smoothly as possible (possible with a blender rod, food processor, etc.).
2In a mixer bowl with a whipping hook, beat the sugar with the cream to whip, until soft.
3Add the oil and other ingredients, including the ground lemon, besides the rising flour and beat for about 4 minutes.
4Add the rising flour and beat in pulses, only until the flour is assimilated and no more, so as not to develop gluten.
5Transfer to a 26-diameter mold or silicone Kugelhof mold. Bake in a preheated oven to 170 degrees Celsius for about 45 minutes, until the cake is firm.
6Mix the coating ingredients with a spoon in a bowl. Cool the cake and create a glaze over it, as in the picture.
