The cook Erez Golko has been cooking since he can remember himself and always makes sure to choose good and available ingredients that, when combined correctly, turn any simple dish into a real pleasure.

Groceries

    • 300 gramslong pasta
    • 4 tablespoons olive oil
    • 3 medium zucchini
    • 3 stalks of green onions, cut into segments 3 cm long
    • 2 cloves garlic cut into thin slices
    • 1/2 tsp. lemon zest
    • A handful of chopped mint leaves
    • A handful of chopped coriander leaves (optional)
    • 1 teaspoonfresh lemon juice
    • salt
    • Ground black pepper
  • To serve

    • A handful of chopped nuts (any kind you like)
    • A handful of chopped dried tomatoes
    • Bulgarian cheese (optional)

Method of preparation

How do you make zucchini, lemon and nut pasta?

  • 1Peel the zucchini into thin strips using a peeler.

  • 2Cook the pasta in a saucepan according to the manufacturer's instructions and filters.

  • 3At the same time, place a wide pan or wok over high heat and add 2 tablespoons of olive oil and the garlic. Fry for about half a minute.

  • 4Add the green onions, salt and pepper, lemon juice, lemon zest, herbs and finally the zucchini. Stir with a wooden spoon or sauté for about 4 minutes over high heat while stirring.

  • 5Put the pasta in the zucchini sauce and herbs in the pan with another 2 tablespoons of olive oil and continue mixing together for another minute or so. Remove from heat.

  • 6Place the pasta in two deep plates, add over the dried tomatoes, grate Bulgarian cheese and sprinkle the chopped nuts and a little olive oil on top, and serve.
