For the sponge cake base:

  • 4 eggs
  • 95 g wheat flour (type 405)
  • 125 g of sugar
  • 1 sachet of vanilla sugar
  • 1 pinch of salt

For the strawberry cream:

  • 1 kg of curd cheese
  • 200 g whipped cream
  • 100 g powdered sugar
  • 300 g pureed strawberries
  • 250 g chopped strawberries (a few more for decoration)
  • 8 sheets of gelatin
  • Juice of 1/2 lemon

When is strawberry season?

Strawberry cheese cream cake: This is how easy it is to make the fruity summer dream

The sponge cake base:

  • Preparation: The oven is preheated (180 degrees top and bottom heat) and the baking pan is lined with baking paper.
  • The eggs are separated. The egg whites are whipped with a pinch of salt until fluffy. Gradually, both the white and vanilla sugar are added and slowly stirred into a firm beaten egg white. Subsequently, the mass is reunited with the yolk.
  • The flour is sifted into the dough and carefully folded in.
  • The dough is poured into the baking pan and baked in the preheated oven for 20 minutes.
  • Finally, it is halved horizontally in the middle (completely cooled).
  • The strawberry cream:

  • First, the strawberries are thoroughly washed and removed from the stalk. Now puree 300 g of the strawberries together with the lemon juice. The remaining strawberries (250 g) are cut into small, bite-sized pieces and set aside.
  • For the cream, the curd is mixed together with the powdered sugar and the strawberry puree. The cream is whipped until stiff and folded in.
  • The gelatin sheets are softened in cold water for 5 minutes, squeezed out and melted in a small saucepan. After 3-4 tablespoons of the cream have been added to the gelatine, the gelatine mixture is added to the remaining strawberry cream.
  • Concluding:

  • The bottom sponge cake base is placed on a plate and covered with a cake ring. Now spread the finely chopped strawberries on top. After the cream has been spread over the strawberries, the whole thing is covered with the second sponge cake base.
  • The cake should now soak overnight (for those who can hardly wait: at least 6 hours) in the refrigerator.
  • A fine powdered sugar blanket, other strawberries or a mint leaf are suitable for decoration. Just as you please.
