However, if you want to enjoy the asparagus healthily and without a guilty conscience, there are also numerous calorie-friendly variants available - such as a light version of the classic hollandaise sauce.

Recipe for light hollandaise sauce with asparagus

These are the ingredients you need:

  • 20 g butter
  • 3 egg yolks

    half a teaspoon mustard (medium spicy)
  • 80 ml vegetable stock (glass)
  • 150 g yoghurt (3.5% fat) (room temperature)
  • Salt
  • Pepper

How to properly prepare hollandaise sauce

  • In a small saucepan, melt the butter and remove from heat. Then squeeze the lemon.
  • Fill a wide saucepan halfway with water and heat until steaming. It shouldn't be cooking yet.
  • Separate the eggs. Then beat the egg yolks with mustard and vegetable stock in a round bowl over the water bath with a whisk until the mixture becomes light and creamy.
  • First add the room-temperature yoghurt tablespoon by tablespoon, then beat in the liquid butter in a thin stream.
  • Season with 1-2 teaspoons lemon juice and salt and pepper. Then serve.
  • Calorie-friendly side dishes with asparagus

    If you want to enjoy your asparagus in a calorie-friendly way, you are welcome to use boiled or jacket potatoes (which can be easily peeled with a trick). Low-fat ham is also ideal as an accompaniment to asparagus.
