These are the ingredients you need for the spring salad with quinoa and feta:
- Dressing:
- 30 ml white wine vinegar
- 3 tablespoons olive oil
- 0.5 tsp salt
- 0.5 tsp pepper
- 2 tsp grainy mustard
- 1 tbsp honey
- 80 g shallots, cut into cubes
- Salad:
- 2 tablespoons cooking oil
- 300 g radishes, halved
- 300 g green asparagus, cut into bite-sized pieces
- 200 g kohlrabi, cut into sticks
- 3 tablespoons white wine vinegar
- 2 tbsp honey
- 150 g lettuce mix
- 100 g cocktail tomatoes, halved
- 200 g cucumber, sliced
- 100 g quinoa, cooked
- 250 g feta, crumbled
- Cress, to taste
It's as simple as this:
- For the dressing: In a small bowl, whisk together the white wine vinegar, olive oil, salt, pepper, grainy mustard, honey, and shallots.
- For the salad: Heat cooking oil in a pan and sauté the radishes, green asparagus and kohlrabi in it. Then deglaze with white wine vinegar and honey and continue to fry until the honey is caramelized.
- Transfer salad mixture to a large bowl. Add the sautéed vegetables, cocktail tomatoes, cucumbers, quinoa, feta and cress and pour over the salad dressing. Mix everything well.
