Germans love hardly any other vegetable as much as asparagus. During the short asparagus season from April to June, the vegetables are available fresh everywhere in markets and shops. Boiled or fried asparagus is particularly popular. But asparagus can also be eaten raw. The numerous varieties of asparagus are available in different commercial classes. However, whether the asparagus is suitable for raw consumption depends mainly on the thickness of the spears. Thin sticks in particular taste much better raw than thick ones. The thicker the sticks, the more bitter the taste when raw. Fresh asparagus is also particularly juicy. In contrast to the raw version, however, the typical asparagus aroma of cooked asparagus is much more pronounced. Raw asparagus tastes slightly sweet and can have a slightly nutty aroma.

For raw consumption, both green and white asparagus is suitable. While you can eat green asparagus with the skin on, it is imperative that you peel white asparagus. If the asparagus is fresh and the lower ends are not hard, the asparagus can be processed whole or in pieces in various recipes.
For example, fresh asparagus is suitable for the following recipes:
- Marinated asparagus: With a homemade dressing, the raw asparagus quickly becomes a tasty salad.
- Asparagus with dip: The asparagus spears can be eaten like carrots or other vegetables with a dip as a snack.
- Smoothie with asparagus: You can also prepare smoothies with the healthy vegetable. To do this, simply add the asparagus to the blender with fruit or other vegetables.
