Method of preparation

How do you make rose pastries filled with pizza?

  • 1In a bowl place the flour, sugar and yeast, mix and form a dimple. In the center of the dimple pour the oil, water and add salt. Put the dough well manually or with a kneading hook until a uniform and soft dough is obtained (about 8 minutes).

  • 2Grease a bowl, place the dough in it, turn over so that it is covered on all sides with a thin layer of oil and cover with plastic. Let rise for an hour.

  • 3Just before the end of leavening, mix together all the filling ingredients in a bowl.

  • 4Remove air from the dough and divide in half. Roll out each part on a floured surface into a centimeter-thick leaf.

  • 5Spread half the filling evenly on each leaf.

  • 6Cut each leaf lengthwise into strips 4 cm thick and roll each strip into a snail. Alternatively, the entire leaf can be rolled into one large roulade and cut into 4 cm thick slices, but in this way less beautiful snails are obtained.

  • 7Place the snails on a baking sheet lined with parchment paper spaced apart. Brush with an egg and let rise for a second time of 30 minutes.

  • 8Meanwhile, preheat oven to 200 degrees Celsius.

  • Bake for about 9 minutes until golden.

  • Freezing, pulling out, heating: Personal pastries can be frozen in a closed container and before serving heat for 10 minutes in the oven or toaster at low heat of 120 degrees Celsius.
