Sicilian ice cream (Shlomi Gabay)
It was difficult to read this without checking at least twice, and almost impossible to share the information before all the relevant sources were cross-checked, but it turns out - contrary to all logic and internal feelings, as mentioned - that the most expensive ice cream in the world is *not* sold in Israel.
And because we suspected in advance that it was a hoax, we brought the official committee of examiners from the Guinness Book of Records for ratification.
"Complex and rich taste". The most expensive ice cream in the world
New record: Most expensive ice cream - JP¥873,400 (£5,469; €6,211; $6,696) made by OMER in Japan.

This is the "Byakuya" ice cream from the Japanese brand Cellato, which combines white truffles from the Italian island of Alba (which alone, according to an updated estimate, cost more than NIS 56,6 per kilogram), Parmigiano Reggiano and Sake Lees (or Sake Kasu), a byproduct of the production of the Japanese alcoholic beverage, which comes as a kind of spread in light shades, with a distinct fruity aroma.
The price, which causes Brain Freeze even before the first teaspoon - $ 696,24 for a small dose, or NIS 884,61.<> according to the representative rate at the time of writing (although here too the business is only expected to rise). And the taste? "Complex and rich, fills the mouth and nose with truffles, hints of fruit, parmesan and sake, leaving behind a magnificent finish," as the lucky ones who experimented put it (not Guinness observers, by the way, they didn't even taste).

"The work paid off." Cellato truffle ice cream(Photo: Walla! system, screenshot)
Cellato has spent more than a year and a half working on this particular ice cream in an attempt to "maximize flavors," and with "many, many attempts and failures until the right result." She was assisted by chef Tadaiyoshi Yamada, who leads the kitchen of Osaka's prestigious RiVi restaurant, and based on his advice to combine flavors from Europe and Japan, all the way to the Holy Grail.
"The certification of the Guinness World Record has made all this work worthwhile," the company's representatives explained with satisfaction, while already raising the next step on the ladder - champagne ice cream and caviar ice cream.
