Many people can hardly get enough of strawberries in the summer. That's exactly what you should try the sweet sheet cake with yoghurt and a double portion of red fruits.

Strawberries are as much a part of summer as the smell of sunscreen and sticky fingers of ice cream (preferably homemade). And if you store them properly, they can even last for weeks. It is best to buy the specimens from Germany, as according to Ökotest, many fruits were contaminated with pesticides.

  • 1/<> kg strawberries (small)
  • 250 g butter
  • 5 eggs (size M)
  • 220 g powdered sugar
  • a pinch of salt
  • 1 Msp. vanilla (ground)
  • 260 g of flour
  • 40 g cornstarch
  • 2 tsp baking powder
  • 250 g whole milk yoghurt

  • 120 g of sugar
  • 500 g whipped cream
  • 2 organic limes
  • 500 g low-fat quark

Preparation of the summer sheet cake with cream and double strawberries

  • Clean the strawberries and cut 350 grams into slices. Leave the remaining fruit whole and set aside. Preheat the oven: top/bottom heat 175 degrees, convection oven 155 degrees. Grease a deep baking sheet and, if necessary, line it with baking paper. Melt the butter and then let it cool slightly.
  • Beat the eggs, powdered sugar, salt and vanilla for about five minutes until creamy and frothy. Mix flour, starch and baking powder in another bowl. Carefully fold the liquid butter and yoghurt into the egg mixture, then add the flour mixture and fold in briefly. Pour the mixture onto the baking sheet and spread strawberry slices on top. Bake on the middle shelf for about 25–30 minutes until golden brown (chopstick test). Remove and leave to cool.
  • Mix cream stiffener with two tablespoons of sugar. Whip the cream until stiff and gradually add the sugar-cream stiffener mixture. Grate the lime zest, squeeze the juice. Mix the quark, remaining sugar, lime zest and juice briefly. Carefully fold the cream into the curd mixture, then spread evenly on the cake. Top with whole strawberries, serve – and let it taste.
