Puff pastry rises, cooks quickly and is wonderfully tender and crispy - ideal for use as a base for quiches or filled pockets. To do this, the savory or sweet filling is placed on one half of the dough, the other half is folded over it and then both sides are pressed down.

At the moment, however, social media such as Instagram or TikTok are increasingly showing a method of preparation that turns everything upside down. And literally: Because in this variant, the ingredients are first placed on the tray and the puff pastry is placed over it like a blanket. Once everything is baked, the "Upside Down Pastries", i.e. the upside-down dumplings, are caramelized and juicy on one side and nice and brown and crispy on the other.

In her TikTok video, Doris demonstrates how to prepare it:

  • Cook the pudding according to the instructions. Meanwhile, peel the rhubarb and cut into small pieces.
  • Once the pudding has thickened, add the rhubarb and let it cook for about two minutes. Always stir, otherwise it will burn. After that, remove from the heat. Preheat oven to 200 degrees.
  • If frozen puff pastry: Take it out and cut the individual portions in half and let them thaw slightly
  • Prepare the baking tray and line it with baking paper, for example. Pour honey directly onto the baking sheet, about 1 tbsp per puff pastry pocket. Add almonds (about 1 tbsp) and the custard-rhubarb mixture (about 1-2 tbsp).
  • Place the puff pastry on the piles like a blanket and then press firmly against the tray with a fork all around. The goal here is to ensure that nothing leaks.
  • Then bake at about 200 degrees top/bottom heat (180 degrees convection) for 20 minutes in the preheated oven.
  • @selfmade_lebensfreude rhubarb pockets, different than planned 😅but delicious. ♬ #bollekochteinfach #rhabarber #blätterteigrezepte #vanillepudding #schnellerezepte #einfacherezepte #kaffeezeit #bollebackteinfach original sound - ༺ Doris Bolle ༻

Tip from Doris: "If it does leak, just put two halves on top of each other - they still taste good!"
