These tasty potato bites are a true classic that can be found in any tapas bar in Spain. Whether as an appetizer, side dish or simply as a snack in between, the Spanish counterpart to fries simply always works.

Patatas bravas are basically nothing more than fried potato pieces. But one should not be fooled by their simple appearance, because their secret lies in their sauce. The "Bravas sauce" is the centerpiece of this tapas delicacy. It consists of a mixture of tomatoes, peppers, garlic and spices, which provide a pleasant spiciness. The sauce is poured over the crispy fried potatoes, which will be perfect with a little aioli. Pommes Schranke sends its regards.

This is how easy it is to prepare the tapas classic patatas bravas with salsa:

You only need a few ingredients for the Spanish snack made from potatoes:

  • Salsa Brava (spicy tomato and pepper salsa):
  • 20 ml olive oil
  • 1 clove of garlic, chopped
  • 200 ml strained tomatoes (a. d. can)
  • 2 teaspoons sweet paprika powder
  • 1 teaspoon smoked, hot paprika powder
  • 1 teaspoon sugar
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 15 ml sherry vinegar
  • Patatas Bravas:
  • 700 g potatoes (mainly waxy)
  • 800 ml olive oil
  • In addition:
  • 70 g aioli
  • 5 g chives rolls

The preparation is uncomplicated and quick:

  • For the Salsa Brava: Heat olive oil in a saucepan along with garlic until fragrant. Add the tomato puree, salt, pepper, sugar, paprika powder and sherry vinegar. Simmer for five minutes, then set aside.
  • For the patatas bravas: Wash the potatoes, peel them and cut them into 3 x 3 cm cubes. Heat olive oil in a saucepan and fry the potato cubes until crispy. This can take 10 to 15 minutes. Remove from the oven and let it drip on kitchen paper.
  • Arrange the patatas bravas in a bowl and serve garnished with the salsa brava, aioli and chives.
