For the Mediterranean bean salad you need these ingredients:
- Dressing:
- 60 ml olive oil
- 15 ml lemon juice
- 1 tbsp oregano
- 1 clove of garlic, finely chopped
- 0.5 tsp salt
- 0.5 tsp pepper
- Bean salad:
- 500 g runner beans
- 100 g black olives, sliced
- 100 g sun-dried tomatoes in oil, diced
- 120 g feta, crumbled
- 60 g walnuts, chopped

For firm beans in bright green, you should blanch the beans. Blanching is a cooking technique in which the beans are briefly immersed in boiling water and then immediately cooled in ice water. This process serves several purposes: the beans become more digestible, retain their color and are then easier to process, such as freezing. Since the beans for the Mediterranean bean salad are fully cooked, they stay in the boiling water longer than usual for blanching. The ice water bath is still recommended afterwards.
