During the Christmas season, there is nothing better than sitting down with friends and family in a cozy atmosphere with a delicious plate of cookies. Among the numerous Christmas biscuits, the Spitzbuben, also known as terrace biscuits, shine as true eye-catchers of the festive bakery. With their characteristic appearance, they add a special colour accent to every cookie plate. With their delicate, buttery texture, the Spitzbuben consist of two round pieces of dough, between which a fruity filling, such as currant, raspberry or apricot jam, is traditionally embedded. Known under different names, such as Linzer Plätzchen, Doppeldecker or Hildabrötchen, they are basically identical in their preparation and sweeten the festive season in a very special way.

But it doesn't always have to be cookies! In addition to the classic Christmas cookies, there are an abundance of other tempting desserts to sweeten the holidays. The preparation is easy thanks to these step-by-step instructions:

  • Preheat the oven to 180 °C top/bottom heat.
  • In a bowl, combine flour, butter, almonds, eggs, sugar, vanilla sugar and salt to form a dough and chill for at least half an hour.
  • Roll out the dough thinly on a floured work surface and cut it out with any cookie cutter. For the cookie lids, cut out one half of the cookies in the middle with an even smaller star-shaped cookie cutter. Place the cookies on a baking sheet lined with parchment paper and bake for ten minutes. Allow to cool completely.
  • Dust the cookie lids with powdered sugar. Put some warmed currant jelly on top of the biscuits without a hole and spread gently. Now place a biscuit lid with a hole on it and press it down gently. Proceed with all other cookies. Enjoy your meal!
