Fancy juicy and fluffy waffles? Thanks to buttermilk, the dough is perfect and if you don't have buttermilk in the house, you can make it yourself from just two ingredients.
The smell of freshly baked waffles in the house brings back memories of fun children's birthday parties, contemplative Christmas markets and cosy Sunday afternoons at the grandparents' house. Because the popular pastry simply tastes good at any time of the year and for any occasion. Whether with powdered sugar, nut nougat cream or cherries – waffles are popular with young and old alike, as long as they are soft on the inside and nice and crispy on the outside. This can be achieved with the perfect dough, which gets exactly this desired consistency thanks to buttermilk.

But waffles don't always have to be made from a batter. After all, everything that comes out of the waffle iron is a waffle. Waffle hot dogs or cheeseburger waffles serve as proof, and for dessert a few sweet croffles, a mixture of croissant and waffles. Brilliant, isn't it?
Back to the classic basic recipe. The simple waffles with buttermilk are particularly moist and fluffy. The buttermilk gives the dough a creamy consistency and makes the waffles nice and fluffy on the inside and crispy on the outside.

- 250 g butter, softened
- 200 g sugar
- 1 packet of vanilla sugar
- 5 eggs
- 500 g flour
- 2 tsp baking powder
- 250 ml buttermilk
The basic recipe can be varied as desired. For example, you can replace 100 grams of flour with cocoa powder for chocolate waffles. The same goes for nut waffles with ground hazelnuts or almonds. And for a Christmas treat, stir a teaspoon of cinnamon or gingerbread spice into the dough.

What to do if the buttermilk is missing?
If you spontaneously feel like delicious waffles, but don't have buttermilk at home, you don't have to despair. Because buttermilk can simply be made from milk and a little lemon juice or neutral vinegar.
To do this, stir the acidifier into the milk and let it rest for about 15 minutes until the milk thickens. For 200 milliliters of buttermilk, take the same amount of milk and add about a tablespoon of lemon juice.

According to the proverb, if you have one on the waffle, you are not completely clean or have a bird. The phrase most likely does not refer to the waffle iron and therefore the delicious pastry itself, but has its origin elsewhere. The verb "waffles" from the 19th century means something like "to chatter" or "to tell nonsense". So if you talked too much and also unclearly back then, you just had someone on the waffle.
