How to prepare crispy, golden-brown Wiener Schnitzel – here's how to do it:

  • Cut as thin slices as possible from the top of the veal.
  • Place cling film on the countertop, put a little oil on top. Then place the cutlets, which are between three and five millimeters thick, cover with foil and pound.
  • Season the cutlets on both sides with salt and pepper.
  • Prepare everything for breading by sifting the flour. Whip the cream in advance until semi-stiff and then whisk it with the eggs and fill a plate with breadcrumbs.
  • Now lightly flour the schnitzel, pull it through the egg-cream mixture, drain and roll very lightly in breadcrumbs.
  • Bake the schnitzel in a pan at 160 to 170 degrees until golden brown on each side. Make sure that the schnitzel swims in the clarified butter. Don't forget to pan.
