The preparation is easy:

  • Mix flour, baking powder, ground almonds, sugar and a pinch of salt. Add the egg, egg yolks and butter and knead with your hands to form a homogeneous dough. Form the dough into a ball and wrap it in cling film and chill for at least an hour.
  • Preheat the oven to 170 °C top/bottom heat.
  • Divide the dough into portions and shape into thin rolls. Divide the dough rolls into pieces four to five centimeters long (ten grams each). Roll the ends a little thinner and place them into croissants on a baking tray lined with baking paper.
  • Bake for about ten to twelve minutes. When the corners of the vanilla crescents start to turn brown, they are ready.
  • On a flat plate, mix powdered sugar with bourbon vanilla sugar (or vanilla pulp) well. Toss warm vanilla crescents in it and let cool.
  • Enjoy!
