Ingredients for a true-to-original sweet and sour “Torta di Limone”

For a springform cake (diameter: 26 to 28 cm) you need:

  • 180g flour

  • 180g sugar

  • 1.5 packets of baking powder

  • 1 packet of vanilla sugar

  • pinch of salt

  • 120 g butter/margarine (plus a little more for greasing the tin)

  • 6 eggs

  • 2 lemons (organic)

It's that easy to bake the classic Italian lemon cake

  • While the oven is preheating to 180 degrees fan (alternatively 200 degrees top and bottom heat), first separate the eggs and beat the egg whites with a pinch of salt in a tall mixing bowl with a hand mixer until stiff.

    Wash the lemons thoroughly, carefully rub off the peel completely and then squeeze it out.

  • In the next step, melt the butter in a small saucepan.

    Meanwhile, beat the egg yolks with the sugar in a large mixing bowl until fluffy.

    Mix the flour with the baking powder in a separate bowl and then add it to the egg yolk mixture in the bowl.

    Add the melted butter, lemon juice and zest to the bowl and stir everything together until smooth.

  • Now carefully fold in the egg whites.

    Grease the springform pan with a little butter or neutral oil and then pour the dough into it.

    Bake in the preheated oven for about 20 to 30 minutes until golden.

    Then take it out, let it cool down a little and garnish with either icing or a little powdered sugar.

    When grating the lemon peel, be careful not to rub off anything white, otherwise it will quickly become bitter.
