The baked chicory from the oven is refined with herbs and a little honey.

You hardly need to buy anything for this French-inspired oven-baked chicory dish, as most of the few ingredients come from stock.
Chicory is the ultimate winter vegetable.
Whether as a small main course or as a generous side dish, chicory is an indispensable part of the kitchen in the cold season.
Not just because the vegetables are in season, but because they can be prepared in a variety of ways as a salad or warm.
This vegetarian recipe from the oven is particularly easy to make: Even though cooking obviously takes some time, the preparation itself only takes five minutes.
Apart from the honey, which softens the slightly healthy bitterness of the vegetables, the baked chicory is perfect for anyone who wants to eat a low-carb diet.
If you don't want to do without carbohydrates, you can serve the chicory with mashed potatoes or, in typical French style, with a baguette - this way you can completely fill up the delicious broth.
Ingredients for the baked chicory from the oven
The choice of ingredients can be varied according to taste: Instead of herbs from Provence, you can refine the chicory with fresh herbs such as parsley.
Not only classic gratin cheese is suitable as a cheese, strong-tasting blue cheeses such as Roquefort are also excellent.
And if you don't like honey or don't have honey in the house, just use a pinch of sugar or leave out the sweetness completely.

For four people you need the following three ingredients:
4 large chicory
100 g grated cheese or goat cheese
1 tbsp Herbs de Provence (or 1-2 tsp each rosemary and thyme)

And from the supply:
1 tbsp olive oil
1 tbsp honey (substitute sugar)
Salt
pepper
Preparation of the chicory gratin
Preheat the oven to 200 °C top/bottom heat.
Wash the chicory, cut it in half and place it cut side up in an ovenproof dish.
Mix the olive oil, honey and herbs de Provence and drizzle over the chicory halves.
Season with salt and pepper.
Sprinkle or top the chicory with the cheese and bake in the oven for 15 to 20 minutes until golden brown.
Sprinkle with fresh herbs if desired.
