This is how the lemon crème brûlée slices work:

You need these ingredients:

  • Lemon cream:

  • 4 egg yolks

  • 150g sugar

  • 1 tbsp lemon zest

  • 0.25 tsp salt

  • 40 g corn starch

  • 150 g lemon juice (approx. 3-4 large lemons)

  • 300 ml whole milk

  • 300 ml whipped cream

  • 30g butter

  • Shortcrust:

  • 100g sugar

  • 1 tbsp lemon zest

  • 260g flour

  • 0.25 tsp salt

  • 230 g butter, melted

  • 1 tsp vanilla extract

  • Crème brûlée topping:

  • sugar, to taste

The preparation is not difficult:

  • Preheat oven to 180 °C fan oven.

    Grease a square baking pan (23 x 23 cm) and line it with baking paper.

  • For the lemon cream:

    In a saucepan, carefully mix the egg yolks, sugar, lemon zest, salt, cornstarch, lemon juice, whole milk and cream together and simmer for ten to 15 minutes.

    Then pour the lemon cream mixture through a sieve into a bowl.

    Add butter and stir in vigorously.

  • For the shortcrust pastry:

    Mix the sugar and lemon zest in a separate bowl.

    Add flour, salt, melted butter and vanilla extract and form into a dough.

  • Pour the shortcrust pastry into the prepared pan and bake for 20 minutes.

    Then pour the lemon cream over it and bake for another ten minutes.

  • For the crème brûlée topping:

    Cut the cooled cake into small slices, sprinkle with sugar to taste and then use a kitchen gas burner to melt the sugar until it bubbles and caramelizes.
