Noodles:
2 tsp salt
250g spaghetti
Sauce:
3 egg yolks
1 tsp pepper
100 g Parmesan, grated
50 ml pasta water
2 salsiccia sausages
Topping:
parsley, to taste

Preparation is so easy:
For the pasta:
Cook spaghetti in salted water until al dente according to package instructions.
For the sauce:
Meanwhile, whisk the egg yolks, pepper and Parmesan with a fork in a bowl and set aside.
Remove the intestines from the salsiccia, cut the sausage meat into small pieces and fry it in a pan without oil.
Add cooked spaghetti and fry briefly.
Remove pan from heat.
Add the egg yolk-Parmesan mix and a little pasta water and stir quickly until a creamy sauce forms.
Garnish with remaining Parmesan and parsley and serve immediately.
