Ingredients for the classic soup with sausages

For about four servings of lentil soup you will need:

  • 150 g plate lentils

  • 3 medium potatoes

  • 1 onion

  • 1 bunch of soup greens

  • 3 Vienna sausages

  • 150 g bacon (streaked)

  • 1 liter chicken or vegetable broth

  • 3 tbsp olive oil

  • 3 tsp white wine vinegar

  • 1 tsp sugar

  • 1/4 tsp cumin

  • salt and pepper

It's so easy to recreate grandma's tried and tested lentil soup:

  • First, peel the onion.

    Finely dice the onion and bacon and fry in a little oil in a large pot over a medium heat until translucent.

  • Wash or peel the greens and potatoes.

    While the carrots, potatoes and celery are finely diced, cut the leek into thin slices.

    The soup greens are then added to the pot and fried.

    The potatoes are added to the fried soup greens together with the previously rinsed lentils and the mixed broth.

  • Cover and simmer everything over medium heat for about 30 minutes.

    The soup is then seasoned with cumin, sugar, vinegar, salt and pepper.

    Cut the sausages into slices and let them warm in the soup for a few minutes.

    Optionally serve with some fresh parsley.
