Quarkkeulchen are a simple but delicious dish that was very popular in the GDR.
The recipe is quick and easy to cook thanks to this recipe.
Along with solyanka and spiced meat, Saxon curds are a classic of GDR cuisine.
The simple but delicious dish is easy to prepare and still tastes great today.
With their fluffy dough made from potatoes and quark and the crispy fried crust, they are reminiscent of the good old days when you sat at the kitchen table with grandma and grandpa and told each other stories from times gone by.
Quarkkeulchen are a typical leftover dish made from leftover jacket potatoes.
But there are also variants of the “Keulchen” that do not contain potatoes at all.
Whether Quarkkeulchen or Quarkkäulchen – the name is derived from the Middle High German term “Kaule”, which stands for “ball” and therefore more or less accurately describes the shape of the dessert.
You make classic curds based on Grandma's recipe like this:
For the curds you need the following ingredients:
500 g floury potatoes
250 g low-fat quark
40g sugar
1 pinch of salt
50g flour
1 egg yolk
1 tsp lemon zest
Raisins, to taste
3 tbsp sunflower oil
Preparing the small pancakes made from quark and potatoes is easy:
Wash the potatoes, peel them, cut them into large pieces and cook them in salted water until tender.
Drain the potatoes, press them through a potato press while they are still hot and let them cool completely.
Add the quark, sugar, salt, flour, egg yolk and lemon zest to the potatoes and knead into a smooth dough.
Refine the dough with raisins if desired.
Form small balls out of the dough, press them into balls between the palms of your hands and fry them in hot oil on both sides until golden brown.
Serve the curds with powdered sugar or cinnamon-sugar and applesauce.
