  • 50g sugar

  • 0.25 tsp salt

  • 4 eggs

  • 2 egg yolks

  • 120 g butter, soft

  • 500 ml milk

Tiramisu cream:

  • 250 g whipped cream

  • 300 g cream cheese

  • 200g powdered sugar

  • 50g cocoa

  • 1 tsp instant espresso powder

  • 40ml Amaretto

Preparing a tiramisu crepe cake is easy thanks to these step-by-step instructions:

  • For the crepes:

    Mix the flour, sugar, salt, eggs, egg yolk, soft butter and milk into a smooth batter.

    Let the dough rest for about 30 minutes.

  • For the tiramisu cream:

    In the meantime, beat the cold whipped cream with the beaters of a hand mixer until stiff.

    Mix the cream cheese, powdered sugar, cocoa, espresso powder and Amaretto until creamy and carefully fold in the whipped cream.

    Refrigerate until ready to use.

  • Heat a non-stick pan.

    Pour the batter into the pan in portions, spread it very thinly and fry the crepes for about two minutes per side.

    Gradually bake about 14 crepes from the dough.

    Let cool down.

  • For the tiramisu crepe cake:

    To stack the cake, place the first crepe on a cake plate and spread thinly with a tablespoon of the tiramisu cream.

    Place the next crepe on top and spread the cream again.

    Continue like this until all the crepes are used up.

    If desired, dust every third layer with cocoa powder.

  • Pour the remaining tiramisu cream into a piping bag and decorate the top crepe with small dots of cream and finally dust with cocoa.

  • Chill for at least two hours before serving.

    The sweet recipe for the unusual crepe cake is particularly suitable for February 2nd, the day of the crepes.

    “La Chandeleur” is a French holiday where crepes are traditionally eaten.

    “La Chandeleur” probably has its origins in the Christian tradition, is always celebrated 40 days after Christmas Eve and is also known as “Maria Candlemas”.

    But pagan influences can also be associated with the holiday and so the day also symbolized the end of winter and the beginning of spring.

    So what does this have to do with crepes?

    Quite simply: French pancakes symbolize the sun.

    And so (not only) in France, crepes are diligently turned in the pan on February 2nd to encourage the sun to shine again and usher in the long-awaited spring.

    By the way, a crepe cake is also called a mille crepe cake because it consists of many thin layers of crepes filled with creams or other ingredients.

    The French word “mille” means “thousand,” and the cake’s name refers to the many layers that make it up.

    The actual number of layers can vary depending on the recipe, but it is usually at least ten layers and there is no upper limit.
