The Amarone dellaValpolicella risotto is a candidate to officially become a typical Veronese dish, obtaining the municipal denomination (Deco).
The announcement today, on the eve of Amarone Opera Prima, scheduled at the Palazzo della Gran Guardia in Verona.
It's the first time as DeCo for a wine-based dish.
"Amarone risotto is an authentic ambassador of the Scaliger food and wine tradition in the world - comments the president of the Valpolicella wine consortium, Christian Marchesini -. A dish that expresses the profound relationship between the 19 municipalities of the denomination and Verona, with the largest urban vineyard in Italy".
The application for recognition was promoted by the typical restaurateurs of the Municipality of Verona, led by the restaurants Caffè MonteBaldo, Al Calmiere and Trattoria Pane e Vino, in collaboration with the Valpolicella Consortium, the VialoneNano Rice Consortium and the Isola della Scala Rice Fair. .
Among the Veronese dishes, the Amarone risotto will be placed alongside historical recipes such as gnocchi, Nadalin, Pastisada de Caval, Pearà and Renga in the list certified by the City Council of the city.
