Endless crispy brown edges.

Decomposed potatoes in the oven/system and voila!

NEWS, Ronit Avidan Sheinfeld

Sliced, mashed, broken and even crushed - everyone has their own method for making a perfect potato dish, the one that before the end of the meal will already finish its role empty and full of pride in the center of the table.

The most delicious part of any such mold, whatever it may be, is the burnt corners, the crispy "schwantz", the ones you can't stop eating and which everyone always hopes to get their hands on.

So instead of mashing or cutting, we simply break up the potatoes with our hands.

First of all, they are cooked well until they are very soft and then they are simply made into asymmetrical pieces.

It looks messy, but it's really the whole pan.

Lots of potential edges and corners are formed and as soon as you drizzle olive oil over everything and put it in the oven to high heat, they turn golden, brown and crackle in your mouth.

Broken potatoes.

Ingredients for the recipe

    • 7 potatoes (butter or rata variety recommended)

    • 6 whole cloves of garlic with the peel

    • Generously olive oil

    • Coarse salt

    • ground black pepper (permission)

  • Conversion calculator

Preparation

How do you make crunchy potatoes?

  • 1

Wash the potatoes well, it is recommended to use Scotch to get rid of soil residues and dirt on the skin.

  • 2

Put the potatoes with the skin in a pot with slightly salted water and bring to a boil.

Cook on medium heat for at least 30 minutes (depending on size).

The potatoes should be very soft.

  • 3

When the potatoes are soft, take them out of the water and let them cool a little and dry while they steam.

You can also cook them in advance in the morning.

  • 4

Take the cooled potatoes and simply break and break them with your hands (not with a knife) into halves or quarters, depending on the size.

  • 5

Put the asymmetrical and messy pieces that we tore and cut into a bowl, season with salt and ground black pepper, add the garlic cloves and allspice leaves and pour olive oil generously.

Flip the bowl until all the pofud pieces are coated and transfer to a pan lined with baking paper.

It's okay for them to get crushed and fall apart a little.

    That's the fun.

You can also arrange them in advance in a pan and season it, just make sure they are well coated with oil.

  • 6

Put in an oven preheated to 200 degrees, until they become brown and golden with lots of crispy edges (the time depends on the heat of the oven, between 20 minutes and half an hour, until they are nicely golden).
