For the classic stew with potatoes, carrots and sausages you need these ingredients:

  • 2 tbsp clarified butter

  • 100 g onions, diced

  • 80 g diced ham

  • 300 g carrots, diced

  • 200 g leek, diced

  • 1 kg predominantly waxy potatoes, peeled and diced

  • 1200 ml vegetable broth

  • 1 tsp salt

  • 0.5 tsp pepper

  • 0.5 tsp marjoram, dried

  • 300g Vienna sausages, sliced

  • Parsley, freshly chopped

Preparation is easy thanks to these step-by-step instructions:

  • Heat the clarified butter in a large pot and sauté the onions until translucent.


    Add the ham cubes and fry briefly.

    Add carrots, leeks and potatoes and fill with vegetable broth.

  • Bring to a boil, reduce heat and simmer soup, covered, until vegetables are tender, about 20 minutes.

    Roughly chop the soup with a hand blender or potato masher and season with salt, pepper and marjoram.

  • Add the Vienna sausages and simmer for another five minutes.

  • Garnish the potato soup with parsley if desired and serve.
