The marketing of 'long-aged Parmigiano Reggiano' (40 months or more) aims to reach 100 thousand wheels in the next few years.
The objective was made official, with a note, by the Consortium for the protection of the PDO, with the participation in Taste Firenze (a food and wine event underway until today) and with the celebrations for the ninetieth birthday of the Consortium, which will take place over the of the whole of 2024. There are currently around 60 dairies that have specialized in the production of long-matured cheeses while marketing has exceeded 65 thousand wheels per year.
In 2023, the 292 dairies of the Consortium (located in the area of origin of the PDO, which includes the provinces of Parma, Reggio Emilia, Modena, Mantua to the right of the Po river and Bologna to the left of the Reno river) produced over 4 million wheels, equal to approximately 160 thousand tons, with milk milked from 267 thousand cows.
Exports, which have grown progressively, have come to represent 47% of the market in over 50 countries around the world.
The protection body that associates all producers of Parmigiano Reggiano was founded on 27 July 1934, when the dairies signed the deed of incorporation of the first Interprovincial Grana Tipico Consortium.
