Beef roulades are a German dish that is perfect for fall.
If you want to save time, cook a hearty stew as a braised dish.
Roulades are a popular dish, but they can be time-consuming to prepare.
This starts with the selection of the meat, continues with plating and stuffing, rolling and binding and ends with the hours of braising.
All steps require patience and finesse, as you would expect from a classic Sunday dish.

But there is a clever alternative that offers the delicious taste of roulade in an uncomplicated format: roulade soup.
You take the same ingredients, cut them into small pieces and cook everything together in one pot, as is the case with typical one-pot dishes.
Brilliant, right?
A hearty roulade soup with potatoes, bacon and pickles works like this:

For a simple soup version of beef roulades you need these ingredients:
40 ml oil for frying
500 g beef roulades, cut into strips
100 g bacon cubes
140g white onions, diced
70g tomato paste
20 g medium hot mustard
0.5 tsp salt
0.25 tsp pepper
1 teaspoon sweet paprika powder
150 ml pickle water
100 g gherkins, diced
1 l beef broth (this is how you make it yourself according to grandma's recipe)
400 g waxy potatoes, peeled and diced
1 tbsp chives, cut into rolls
Preparation is easy and definitely quicker than rolling beef roulades:
Heat cooking oil in a pot and fry the beef roulade strips together with the bacon cubes for five minutes.
Add onions and fry until translucent.
Add tomato paste, mustard, salt, pepper, paprika powder, pickle water and pickles.
Deglaze with beef broth and bring to the boil.
Add the potatoes, reduce the heat and simmer, covered, for half an hour until the vegetables are cooked and the meat is tender.
Pour into soup bowls and serve garnished with chive rolls.
