Perfect Cauliflower Rice/Nimrod Saunders

Ingredients for 4-6 servings:
1 medium cauliflower
2 tablespoons of canola oil
2 tablespoons sesame oil
1 red pepper cut into strips
1 onion, halved and sliced into strips
1 carrot cut into sticks
1 package sliced mushrooms
3 green onions cut into strips
2 tablespoons of sweet soy
2 tablespoons sweet chili
2 spoons of spicy ketchup
4 chopped garlic cloves

Instructions:

Grate the cauliflower on a coarse grater, so that small crumbs are obtained.
Transfer to a bowl, pour over boiling water, cover and set aside for 15 minutes.

Heat canola oil and sesame oil, sauté the vegetables for 4-5 minutes.
Add sweet soy, chili, ketchup and garlic, and mix.
