For the vegan mushroom bolognese you need these ingredients:
40 ml cooking oil
200 g oyster mushrooms, finely chopped
200 g brown mushrooms, finely chopped
100g onions, finely chopped
80 g carrots, finely chopped
80 g celery stalks, finely chopped
2 cloves of garlic, finely chopped
1 tsp salt
0.5 tsp pepper
250 ml red wine
500g chopped tomatoes
1 bay leaf
In addition:
300g tagliatelle
Oregano, to taste
Preparation is easy thanks to these step-by-step instructions:
Heat cooking oil in a pan.
Fry the oyster mushrooms, mushrooms, onions, carrots, celery, garlic, salt and pepper for ten minutes.
Deglaze with red wine, add tomatoes and bay leaf and simmer covered for 25 minutes.
In the meantime, prepare tagliatelle according to package instructions.
Add the pasta to the sauce, mix together and serve.
Garnish with oregano to taste.
