In this version of the vegan mushroom bolognese, tagliatelle is used instead of spaghetti to intensify the taste experience.

Tagliatelle, one of many classic Italian pasta varieties, are characterized by their wide, flat shape, which gives them the ability to perfectly enclose sauces.

In addition to mushroom bolognese, tagliatelle are also ideal for dishes such as tagliatelle in creamy chanterelle cream sauce, tagliatelle with chicken and mushrooms or one-pot salmon pasta.

The vegan mushroom bolognese works like this:

For the vegan mushroom bolognese you need these ingredients:

  • 40 ml cooking oil

  • 200 g oyster mushrooms, finely chopped

  • 200 g brown mushrooms, finely chopped

  • 100g onions, finely chopped

  • 80 g carrots, finely chopped

  • 80 g celery stalks, finely chopped

  • 2 cloves of garlic, finely chopped

  • 1 tsp salt

  • 0.5 tsp pepper

  • 250 ml red wine

  • 500g chopped tomatoes

  • 1 bay leaf

  • In addition:

  • 300g tagliatelle

  • Oregano, to taste

Preparation is easy thanks to these step-by-step instructions:

  • Heat cooking oil in a pan.

    Fry the oyster mushrooms, mushrooms, onions, carrots, celery, garlic, salt and pepper for ten minutes.

  • Deglaze with red wine, add tomatoes and bay leaf and simmer covered for 25 minutes.

  • In the meantime, prepare tagliatelle according to package instructions.

    Add the pasta to the sauce, mix together and serve.

    Garnish with oregano to taste.
