What’s special about this Mexican enchilada lasagna recipe?

October 21st is International Nacho Day
So why don't we have a nacho recipe for you today?
Let's be honest: Nachos, in their simplest form, are tortilla chips with cheese sauce and maybe jalapeños.
You don't need a recipe for that, do you?
If so, try this: Nacho Cheese Dip with Beans.
But if you like to eat tortilla chips as a main course and not just as a movie snack, then you should try our Mexican enchilada lasagne with nacho topping.
That's how it's done:
You need these ingredients:
2 tbsp cooking oil
80g red onions, diced
2 cloves of garlic, minced
5 g chili pepper, chopped
400 g minced meat
375 g corn (canned)
250 g kidney beans (canned)
800 g diced tomatoes (canned)
1 tsp salt
1 tsp pepper
1 teaspoon paprika powder, sweet
100 g pepper cream cheese
200 g sour cream (10% fat)
8 tortillas / wheat flatbreads (20cm diameter)
300 g mozzarella, grated
50g tortilla chips
Preparation is so easy:
Preheat oven to 180 °C fan oven.
Heat cooking oil in a pan.
Sauté onion, garlic and chili in it.
Add minced meat and fry until crumbly.
Add corn, kidney beans and chopped tomatoes.
Season with salt, pepper and paprika.
Stir in the sour cream and paprika cream cheese, bring to the boil and set aside.
Grease a baking dish with a little cooking oil.
Place 2 tortillas in it, cover with some minced meat sauce and sprinkle with grated mozzarella.
Layer tortillas, sauce and cheese alternately until the minced meat sauce is used up.
Cover the top layer with mozzarella and tortilla chips.
Bake the casserole for about 20 minutes until the cheese has melted.
Clean up!
