A craft beer made with recovered bread and entirely organic to make a contribution to the fight against food waste and a solution to excess production: this is what is proposed with the arrival of the "Erapane" beer, launched and promoted on the occasion of the day against food waste (5 February) and created by the Rizzato Bakery, in Veneto, with the Cerchi Nel Grano brand.
Among the purposes of the birth of the product was that "in Italy 33% of bread is wasted with estimates that speak of approximately 13,000 quintals of baked goods that are thrown away daily in the country".
The beer - a note informs - is made by adding bread to barley malt (such as Pilsner) while the hops used are Perle: the result is a light beer, with an aroma reminiscent of honey which combines with the herbaceous tones given from hopping.
In the mouth - reports Panificio Rizzato - it is balanced, the bitterness, moderate but persistent, makes drinking easier.
"Erapane", being artisanal, is not pasteurized allowing - it is specified - to safeguard its organoleptic properties.
