Blinches are the kind of recipes that everyone is afraid to make at first, but of course, immediately afterwards they don't understand how they didn't make them on a regular basis.
Go with the assumption that the first blintzes may not have turned out as well as possible (but still delicious for a quick snack in the kitchen), and in any case, we promise you that the rest will be great.
Fill with cheese, jam or fruit.
Perfect blinis
Ingredients for the recipe

½ cup flour
¼2 cups milk (or water)
3 eggs
3 tablespoons of oil
¾ teaspoon of salt

How do you make grandma's blinis?

Mix all the ingredients in a whisk (beater) until a thin and smooth paste is obtained.

Heat a pan (diameter 20 cm) with ½ teaspoon of oil. Pour 2-3 tablespoons of the paste into the hot pan and shake it so that the paste covers its entire surface.

Fry until golden and remove the fritters to a flat plate covered with parchment paper or a clean towel.

Note: oil is only needed for the first omelette.
You don't need to oil the pan to fry the rest of the fritters.
Fry on a large flame so that the pan is hot during frying.
