Once we tried to make classic wild flaky cookies (beurre=butter).
We baked cookies, crumbled them, and from the crumbs we made dough again, from which we baked the cookies.
Even then it was not tasty enough for us.
Connoisseurs of French cuisine will forgive us, but to our palate, these cookies are no less delicious than the classic patty-bars.

Ingredients for the recipe

90 grams whole almonds (2/3 cup)
60 grams jaggery sugar (can be found in stores that specialize in raw materials from India) or 1/4 cup cane sugar
250 grams white spelled flour or half white and half whole
½ teaspoon of baking soda
Salt
½ tbsp olive oil
40 grams of coconut oil (4 tablespoons of liquid)
1 teaspoon vanilla extract
2 tablespoons Amaretto liqueur (or other)
60 ml for rice or other milk (1/4 cup)

How do you make a vegan biscuit with the taste of wild feti?

Grind the almonds and sugar in a food processor to a powder.
Add the flour, baking soda and a little salt and process a little.
Add the rest of the ingredients and process until a slightly crumbly dough is formed.
Finish by working with your hands into a uniform ball.

Divide the dough in half.
Roll out one part between 2 baking sheets into a 40x40 cm square, as thin as possible (2 mm thick).

Remove the top paper and cut the leaf into rectangles.
Transfer the baking paper with the cookies to the mold.

Prepare the second part in the same way and bake for 10-12 minutes in an oven preheated to 170 degrees, until golden.
