More than just a delicious use of leftovers.
There are different recipes for solyanka and they are all delicious.
Basically, there are three types, depending on whether the main ingredient is fish, meat or vegetables.
They all have one thing in common: they are prepared with
pickled vegetables
.

With this quick and delicious soup you can easily empty your fridge.

Different sausages from last brunch?
Peppers or carrots?
Some crème fraîche or cream that wasn't completely used up?
No problem, everything goes into the
sour-spicy
solyanka.
The pickle water will do the trick.
That's how it's done:
These ingredients are needed:
600 g sausage (e.g. Lyoner, hunting sausage, salami)
1 tbsp cooking oil
200 g onions, sliced
1 tbsp tomato paste
720 ml Letscho (in a glass)
400 g pureed tomatoes (canned)
500 ml vegetable broth
100 ml pickle stock
200 ml water
150 g pickles, cut into strips
1 tsp salt
1 tsp pepper
1 teaspoon sweet paprika powder
Toppings:
sour cream
Lemon wedges
parsley, chopped
Who or what is Letscho?
Letscho is a typical Hungarian braised dish made from bacon, peppers, tomatoes, onions and spices.
In this country, Letscho is usually sold as a canned “pepper in a spicy tomato sauce”.
The main difference to the Hungarian original is the lack of animal products and the vinegar it contains.
Letscho is particularly valued as an ingredient in the soup Soljanka and gives it a hot and sour note.
The preparation is simple:
Cut sausage into strips.
Heat cooking oil in a pot.
Sauté the sausage and onions in it.
Add tomato paste and fry briefly.
Deglaze with Letscho, vegetable broth, pickle water and water.
Add the pickles, salt, pepper and paprika powder and bring to the boil.
Cover and simmer for 15 minutes, stirring occasionally.
Divide the solyanka into bowls and serve garnished with sour cream, parsley and lemon wedges if desired.
