This recipe for housewife-style matjes is a real classic in northern German cuisine.

The ideal hangover breakfast on New Year's Day.
During my training period, there were one or two mornings when I arrived at work not quite fit after a night of drinking.
Luckily, there was a fish department at my workplace that had the perfect hangover breakfast in true fisherman tradition: housewife-style herring.
And if you think that's not for you, then you've never had a juicy one , salty matjes with a sweet, creamy sauce eaten after a night of partying.
By the way, it was also a custom to eat a roll mop.
For the very brave gourmets there was a fresh oyster for breakfast.
It works wonders.

That's how it's done:
You need these ingredients:
200g yogurt
50g mayonnaise
20g mustard
200 ml whipped cream
0.5 tsp pepper
1 tsp salt
2 tsp sugar
100 g pickles, cut into strips
70 g onion, cut into strips (equivalent to a small onion)
100 g apple, cut into strips
300 g pickled herring fillets
parsley, chopped
The preparation is very easy:
Mix the yogurt in a bowl with mayonnaise, mustard, whipped cream and the spices pepper, salt and sugar.
Add the pickles, onion, apple and herring and stir gently.
Garnish with parsley to taste.
Et voila!
