Utilizing leftovers in the refrigerator is a well-known hobby of ours because really, the amount of food that is thrown away is a scandal in itself.
This recipe takes the end of the bean soup that you have left in the pot, the one that even if you scrape the bottom well you will get maybe one portion of it, and turns this delicious soup into an elaborate Mexican burrito.
From here you are of course welcome to improvise and add - rice and avocado, invest in a jar of pickled, sweet and spicy Halifinio and combine in the recipe and more according to your imagination (who said melted cheese?).

Ingredients for 2 dishes:
1 cup of bean soup
2 large tortillas
Sliced avocado
A small purple onion sliced into rings
Sliced tomato
4 tablespoons of cooked rice (optional)
A handful of fresh cilantro leaves and/or green onions

Instructions:
1.
Cook the soup over high heat, uncovered, until its texture is reduced and it thickens and turns into a sauce.
If necessary, you can add a teaspoon of tomato paste to thicken the sauce.
2.
Place a tortilla on sandwich paper, arrange on it 2-3 spoons of beans with sauce, avocado, fresh vegetables and rice (if desired), roll in paper and cross.
