1 kg mussels
6 tbsp olive oil
50g onions, finely chopped
2 cloves of garlic, finely chopped
100 ml white wine (or a non-alcoholic alternative)
400 g pureed tomatoes (canned)
1 bay leaf
1 pinch of pepper
1 pinch of salt
parsley, to taste

Preparation is easy thanks to these step-by-step instructions:
In a large bowl, wash the mussels thoroughly with cold water and let them rest for ten minutes.
Then sort out the opened mussels and, if necessary, pluck away the beards.
Heat olive oil in a pot.
Add onions and garlic and sauté until translucent.
Deglaze with white wine and add pureed tomatoes and the bay leaf.
Season with pepper and salt and reduce to a sauce for five minutes.
Add the mussels to the sauce, stir and simmer covered for another seven minutes.
Arrange the finished mussels in tomato sauce in a deep plate and garnish with parsley to taste.
Roasted bread tastes good with it.
